The equivalent of about 1/4 bison.
About 65# of ground bison meat in 1 pound packages.
About 3 or 4 Roasts - a combination of Arm & Chuck about 3 pounds each.
TBones and Ribeye Steaks cut 1 inch thick and packaged 2 steaks per package. There will be about 10 -12 pounds of steaks.
About 4 pounds of soup bones, 2.5 pounds boneless stew meat and 3.5 pounds ribs.
Wrapped in clear packages.

We typically harvest our bison when they reach the stage of highest quality; between 3 and 4 years of age. Weights can vary from animal to animal.

~ 6 lb. T-bone steaks (1 inch thick)
